Palace Prime
Steakhouse
Palace Prime's Chef Durham, a veteran of the local fine-dining scene, explains that after decades of training in the French technique, working in restaurants all over the world, and helming some of Santa Fe’s finest kitchens, he ended up working on the very street where he was born—Palace Avenue. His ever-changing menu encourages frequent visits to try seasonal dishes or the catch of the day. Seafood dishes have recently included a delectable crispy-skin bluenose bass with roasted carrots and potatoes and a cauliflower puree, and the meatiest mussels I have ever seen, paired with perfectly crisp french fries and Texas toast–like slices of buttered baguette. Turf is also well represented with items such as the herb-cured bison carpaccio, Prime steaks, and what Durham not-so-humbly refers to as “the best cheeseburger in town.”

His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible. Nothing evokes the mystery of Mexican cuisine more than mole, a regional dish from the heart of the country. Chef Olea is delighted to share his moles that include his “New Mexican Mole” that he created to commemorate Santa Fe’s 400 year anniversary in 2009.

The Shed
Classic Southwestern Cuisine
The Shed is one of the oldest restaurants in Santa Fe and one of the best for casual New Mexican specialties. You will be judged by one seemingly benign question: Red or Green? A reference to the choice of chile - try “Christmas” for a bit of both. Good margaritas. If you are looking for a restaurant hopping with energy, this is the place for you! Some outdoor seating is available. Go early, or after the lunch rush hour, as it’s a popular spot. The Shed also operates “La Choza”: south of the Railyard, where it is usually easier to get a table.

Paloma
Mexican-Inspired Cuisine
Paloma is a vibrant Mexican-inspired restaurant and bar. Chef Nathan Mayes has created a menu of lively, modern dishes. Some are authentic recipes, and some are fresh interpretations of Mexican cuisine. Everything in our kitchen is made from scratch, including the corn tortillas for our tacos. For these, we use organic non-GMO landrace corn from Oaxaca imported by a great, young company called Masienda. All of the ingredients we use are carefully sourced, seasonal, and local whenever possible. For a constantly evolving list of our sources for produce, meat, and fish, please see our list below. We believe Paloma offers great value for the integrity of our ingredients, the creativity of our kitchen, and the contemporary cooking methods we use. We keep our prices as low as possible, while remaining committed to the quality ingredients we crave and the sustainability we believe in. Paloma’s bar is mezcal-focused with a festive selection of agave-based cocktails as well as classic cocktails, beer, and wine.

Italian-leaning Gastropub
Chef David Sellers made his return from a 10-year absence to the Santa Fe dining scene at Horno Restaurant. Sellers was sous-chef at Santacafé for 10 years before opening Amavi in 2007. He spent the past decade spent away from Santa Fe kitchens, first in Connecticut and since 2014 at the Street Food Institute in Albuquerque, which he founded. After his time at the Institute, his mission has been to deliver delicious food made with love and local ingredients “to do fine food but not fine dining. No white tablecloths. I have honed the art of making great food that is not killer expensive. No pretense, just great food.”
